The slow simmering of tender beef, mingling with fresh vegetables and aromatic herbs, created a symphony of flavours that was both simple and profound.

Ingredients:
- 500g stewing steak, cubed
- 2 tablespoons olive oil
- 2 carrots, sliced
- 2 potatoes, cubed
- 1 onion, chopped
- 2 cloves garlic, minced
- 3 cups beef broth
- 1 cup red wine (optional)
- 2 tablespoons tomato paste
- 1 teaspoon dried thyme
- Salt and pepper to taste
Instructions:
- In a large pot, heat olive oil over medium heat. Add the Hereford stewing steak and cook until browned on all sides.
- Add the onions and garlic, and cook until softened.
- Stir in the carrots, potatoes, beef broth, red wine (if using), tomato paste, thyme, salt, and pepper.
- Bring to a boil, then reduce heat to low. Cover and simmer for 1.5-2 hours, or until the meat and vegetables are tender.
- Serve hot with crusty bread.
