Honey & Mustard Glazed Hereford Beef Roast

A Sunday roast doesn’t have to be complicated, but it should always be special. Using the roasting joint from your Hereford Beef Box, this recipe combines a sweet and savoury glaze that pairs perfectly with the rich flavour of grass-fed Hereford beef.

Ingredients (Serves 6–8)

  • 1.5–2kg Hereford Beef Roasting Joint (from your Beef Box)

  • 3 tbsp wholegrain mustard

  • 2 tbsp honey

  • 2 tbsp olive oil

  • 4 garlic cloves, crushed

  • 1 tbsp fresh thyme (or 1 tsp dried)

  • 1 tsp salt

  • ½ tsp cracked black pepper

Method

  1. Preheat oven to 200°C (180°C fan).

  2. Make the glaze - In a bowl, mix mustard, honey, olive oil, garlic, thyme, salt, and pepper.

  3. Prepare the beef - Pat the joint dry with kitchen paper. Place in a roasting tin and rub the glaze all over the beef.

  4. Roast - Place in the oven for 20 minutes to get a nice crust, then reduce the heat to 160°C (140°C fan). Roast for a further:

    • Rare: 15 minutes per 500g

    • Medium: 20 minutes per 500g

    • Well-done: 25 minutes per 500g

  5. Rest the beef - Remove from the oven, cover loosely with foil, and rest for at least 20 minutes before carving.

  6. Serve - Slice thinly and serve with roast potatoes, carrots, parsnips, and a rich gravy made from the pan juices.

Farm Tip 

Leftovers make incredible roast beef sandwiches the next day. Just add horseradish cream or mustard.
