Slow-Cooked Beef Tacos with Hereford Beef

Ingredients (Serves 4-6)

  • 1kg Hereford stewing beef (from your Beef Box)

  • 1 large onion, sliced

  • 2 garlic cloves, minced

  • 250ml beef stock

  • 1 tsp ground cumin

  • 1 tsp smoked paprika

  • 1 tsp chili powder (optional, for heat)

  • Salt & black pepper

  • Tortillas (soft corn or flour)

  • Toppings: shredded lettuce, grated cheese, salsa, sour cream, avocado


Method

  1. Prep the beef - Season the beef with salt, pepper, cumin, paprika, and chili powder.

  2. Layer the base - Place onion and garlic in the bottom of a slow cooker (or heavy casserole dish).

  3. Cook low & slow - Add the beef, pour over the stock, cover, and cook:

    • Slow cooker: 6-7 hours on low

    • Oven: 160°C for 3-4 hours

  4. Shred the beef - Once tender, remove and shred with two forks. Mix back into the juices.

  5. Assemble tacos - Warm tortillas, fill with shredded beef, and top with your favourite toppings.
